Cool Hunting has a great little video on Tom Mylan, the butcher at Marlow & Daughters — the butcher shop spin-off of the Marlow & Sons restaurant in Williamsburg, Brooklyn. Mylan talks about their whole-animal approach to meat, the importance of tying one's reputation to one's product, and his own Mr. Miyagi–style apprenticeship.
He carves up a pig in the video, but the raw nibble we see a customer pop into her mouth he says is part of their "beef sashimi tasting."
That's fresh, kids.
